In honor of Earth Day, LBCB teamed up with American Apparel Toronto to shoot two of it’s beauties and district managers, Daniela and Hayley. We chatted about foodie things, as well as some of the environmental initiatives American Apparel has. Every day should be Earth Day! And it’s amazing when companies do what they can to reflect that by showing some love for our home sweet home.

Here are some LBCB tips on keeping it eco in the kitchen:

Use organic ingredients whenever possible.
Fresh is best! Plant based foods are better for the environment and our animal friends.
Buy in bulk to reduce packaging waste, and use biodegradable baggies.
Go local! Reduce your footprint and shop at farmer’s markets.
And don’t throw it out. Having leftovers around is always a good thing.

What do you cook for friends: I like to cook panqueques, pasta with fresh pesto, and risotto.

Fruit or veggies? Veggies!

How does food make you feel happy?

It makes me the most happy in the world–it makes me happy when it is eaten with love because it is cooked with love. And when my husband and my son make sure to eat their whole plate!

Why did you decide to go vegetarian?

I have been eating vegetarian for over 20 years but I think that I have always been a vegetarian. I come from a place where eating meat is the staple of everyone’s diet – this is because I come from Patagonia where one of the main livelihoods is cattle-raising. I remember when I was younger, I saw a cow separated from her calf, and I can tell you that cows have tears and they cry for days and weeks and months when they lose their babies. Sometimes they even electrocute themselves trying to jump fences looking for their offspring. There is no way that I could eat any of these animals–they are smarter than we are. And I haven’t even started on any of the obvious ecological repercussions.

In what ways do you try to be more eco in your day to day life?

By being vegetarian and I recycle daily. In my day to day, I try to teach my son ways to be more conscious and that our environment is a limited natural resource.

American Apparel has a lot of eco friendly aspects. Which one is your favourite?

We have solar panels on our factory HQ, we have an organic line and we recycle fabric scraps instead of burning them like our competitors.

Why did you want to make a recipe with avocados in it today?

I love avocados because I am Chilean! We always have avocados in our house–and if you miss the perfect ripeness, you can always put it in your hair. Why wouldn’t you want to always have avocados around?

Chunky Guacamole (from Lookbook Cookbook – the book)

Makes 1 bowl

2 medium tomatoes, diced
½ medium cucumber, diced
½ medium red pepper, diced
2 or 3 green onion stalks
1 small jalapeno pepper, minced
1½ tbsp fresh lime juice
½ tsp sea salt, plus more to taste
2 medium avocados

Add the tomatoes, cucumber, red pepper, green onion and jalapeno to a medium-size bowl. Stir in the lime juice and salt.

Add one avocado to a small bowl and mash it with a fork. When the chunks are removed, stir it into the veggies and mix well.

Remove the flesh of the other avocado with a spoon and dice it into small cubes. Mix the second avocado into the guacamole, leaving the chunks intact. Add more salt, lime or green onion as desired, and serve.

I feel the healthiest when… I am listening to my gut. Having a gluten sensitivity can be difficult when you love so many of the foods you should be avoiding! I feel my healthiest when I listen to my belly instead of my taste buds.

I’d like to do an eating tour of… the Mediterranean. I have wanted to visit Greece for a long time and am very drawn to the fresh ingredients and meze style of eating (similar to tapas–small sharing plates). I’d jump to Lebanon from there for stuffed veggies, hummus and tabbouleh.

Salty or Sweet: SALTY!

How does food make you feel happy?

Food makes me feel the happiest when I am consuming it with the people I love who love food as much as I do! I am lucky to have a close group of friends who love to cook and who enjoy a similar diet to mine. The nights that I enjoy the most are those spent cooking and eating with them.

What was your relationship with food like when you were younger?

My mother is a bit of a health nut. We only had dessert on special occasions, only ate seasonally and had way too much steamed spinach. I think I resented the fact that I didn’t eat the junk that a lot of my friends did–but I have happily grown out of this stage!

How has it changed now?

I have taken on my mother’s habits. I now rarely eat dessert and try to eat as seasonally as possible (still won’t touch steamed spinach, unfortunately!). I also try my best to eat locally. We are so lucky to have incredible farmers’ markets in the middle of the city and I try my best to frequent Sorauren Park on Mondays and Dufferin Grove on Thursdays in order to get the best possible produce with the smallest impact on the environment.

In what ways do you try to be more eco in your day to day life?

I try to cut down on waste as much as possible; my roommate and I compost, buy and eat local products and produce and bike as much as possible to cut down on transportation emissions. I also love to take advantage of Toronto’s fantastic vintage/second-hand clothing shops.

Can you tell us more about American Apparel’s organic cotton line?

The Sustainable Edition of American Apparel’s t-shirt is made from 100% USDA Certified Organic and pesticide-free cotton. The Organic color line uses low-impact dyeing, which uses the least amount of water when compared with all other dyeing processes available and the cotton absorbs over 70% of the dyestuff. American Apparel also joined the Cleaner Cotton Campaign by buying 30,000 pounds of Cleaner Cotton (also known as B.A.S.I.C. cotton) to incorporate into our non-organic line. This campaign was created by the Sustainable Cotton Project and was created to offer farmers profitable strategies for reducing chemical use in cotton cultivation and avoid the use of genetically modified seed.

Can you tell us more about American Apparel’s recycling program?

At American Apparel HQ scrap fabric is turned into yarn for new garments when possible, or given to the custodial team for cleaning. We also donate truckloads of safe excess materials to a non-for-profit called Trash for Teaching (TFT) whose focus is to educate over 100 L.A. schools about resource management at the manufacturing level.

Our catalogs are printed on 100% post-consumer recycled paper with non-toxic inks and we house a state-of-the-art solar panel installation on the roof of our downtown LA factory. These solar panels generate 150 kilowatts of clean, renewable power contributing to 15% of our energy needs!

Why did you want to make gluten free energy bites today?

I wanted to make gluten-free energy bites because, despite my propensity to crave salty delights, I am still partial to chocolate! Since discovering my gluten sensitivity, I have wanted to explore making sweet gluten-free treats that are healthy and will provide me with energy instead of slowing me down. I sometimes struggle with getting enough fiber into my diet – and so this date-heavy recipe provides me with it all.

Cacao Energy Bites

8-12 dried, pitted dates
1 cup almond meal
2 tablespoons cacao powder
1 tablespoon chia seeds
pinch of cinnamon

Add 8 dates and all of the other ingredients to a food processor and mix into a crumbly dough. Add more dates as needed to make the dough stick together and blend again.

Roll into small balls in the palm of your hand, place on a plate and set in the freezer to set. Keep cold until ready to serve.
